Avial, also spelled Aviyal, is a traditional and highly nutritious mixed vegetable dish from Kerala and Tamil Nadu in South India. A key item in the Kerala feast known as Sadhya, it is commonly prepared for weddings, festivals, and special occasions. The dish consists of a colourful mix of vegetables gently cooked in a coconut and yogurt-based sauce, then finished with raw coconut oil and fresh curry leaves, giving it a distinctive aroma and rich, authentic flavor.
