Semiya Payasam is a popular South Indian dessert made with roasted vermicelli (semiya), milk, sugar, and ghee. The vermicelli is cooked in milk until soft and creamy, then sweetened and flavored with cardamom. It is usually garnished with fried cashews and raisins. Semiya Payasam is commonly served during festivals and special occasions such as Onam and Vishu in Kerala.
