Appam is a well-loved South Indian pancake made from fermented rice batter blended with coconut milk. It’s easily recognized by its distinctive bowl-like shape and contrast in texture—fluffy and airy at the centre with delicate, lacy, crisp edges. Lightly sweet with a gentle tang from fermentation, appam is traditionally cooked in a deep, curved pan called an appachatti.
